The best Pancake's recipe ever

INGREDIENTS:

188 grams of flour

14 gr of yeast

1 teaspoon of salt (5.92 g)

14.3 grams of sugar

60 ml of milk

1 egg

60 gr of melted butter

 

 In a large bowl sift together the flour, baking powder, salt and sugar. Make a fountain in the center and pour in the milk, egg and melted butter; mix until a homogeneous mixture is obtained. 

 Heat a lightly greased griddle or skillet over medium-high heat. Pour or pour the batter onto the griddle, using about 1/4 cup for each pancake. Brown on both sides and serve hot.

5 SECRETS YOU SHOULD KNOW:

 

  1.  Fairly low heat. Start pre-heating your pan over low heat when you start making the batter so that by the time you've done the pan is ready to go. Never, never, light the fire too high.
  2. Know when to flip . If you have your heat set properly this never fails. Once the bubbles on the edges pop, and don’t fill back in with liquid batter you can be sure it is ready to flip, and upon so-doing it will reveal a perfectly golden brown surface.
  3.  Butter. It will add more flavour than oil to your pancake making. Melt it first then dip in some kitchen towel and coat your pan with it. You want the pan to be just coated – you're not shallow-frying. Butter burns easier than oil so keep an eye on it. If you prefer to use oil, then plump for a flavourless oil such as sunflower or peanut oil. Get the pan hot then turn to medium before adding the batter.
  4. Vanilla's shades. Adding just half a teaspoon of vanilla extract will take it up a notch. Vanilla balances flavour, like salt or lemon juice, so it's just enough to add something a little special. -- As well as adding a few drops of vanilla extract to a batter before frying, try a little orange blossom water instead. Or grate the zest of a lemon or orange over the pancakes once cooked. You could add half a teaspoon of spice too – cinnamon works well. If you're making savoury pancakes, you could stir in half a teaspoon of dried oregano, mint or mixed herbs.
  5. Keep them warm. If you're making a large amount of pancakes, you probably wanna keep them warm while you prepare the rest. So what's the best way to do it? It is advisable to place a rack on a baking sheet and keep it in a low oven. Put the cooked pancakes in a single layer on the grill so that the air can circulate and do not get soggy.
